I decided to opt for this marathon over Hardford since its on the Sunday, and Hardford is Saturday and I can't register online anymore, and it would be rushed to get there with no entry guarantee. This last minute marathon will replace my planned 22 miler this weekend (whats 4 more miles..).
I don't have a race plan yet, but I will be conservative since this is not my "A" race, so I will likely start out slow and see how it goes. Weather looks good - partly cloudy low 34F, high 57F so that should help.

This week we have been eating so well. Its harvest time in Ontario, and I made a wonderful homemade tomato soup and homemade sphaghetti sauce with fresh tomatoes and basil. While at the farmers market look what I picked up for $2.50!!
One brussel sprout tree!! I never knew how brussel sprouts grew.. Either way, I rarely make brussel sprouts, anyone have any good suggestions for preparing them. Hubs doesn't like them very much, so I am determined to make a tasty dish that he will like.

I LOVE LOVE Brussels sprouts - I have three "trees" in my garden.
ReplyDeletethis is one of my favorite recipes:
Roasted Brussels Sprouts with Pancetta and Goat Cheese
1 lb. brussels sprouts
2 T olive oil
2 T balsamic vinegar
1 t minced garlic (about 2 cloves)
2 oz pancetta cut crosswise into 1/3-inch-wide strips
1 1/2 T Parmesan cheese
1-2 T crumbled goat cheese
Preheat oven to 425 F. Trim brussels sprouts, remove any discolored leaves, and cut into half. Put sprouts in mixing bowl and toss with olive oil, balsamic vinegar, garlic, and pancetta.
Spray roasting pan with non-stick spray. Arrange sprouts in a single layer on roasting pan, and roast 25 minutes, turning occasionally, or until sprouts are slightly crisp and golden brown on the edges.
Toss with the parmesan cheese. Top brussels sprouts with goat cheese.

ReplyDeleteFood Network had on a great brussel sprout recipe a while ago, although not the most healthy. It was basically flash fried sprouts (no breading) with crumbled bacon on top!
YOu're such an inspiration - signing up for your marathon the week before and being totally cool about it. I really admire that!

ReplyDeleteAs for the Brussel Sprouts, you HAVE to roast them! That's my favorite. Olive oil or butter, salt and pepper, then roast them at 400 or 450 for a while (20 min?) until tender. Yum!
I have never seen Brussel sprouts before, that is crazy! Glad this race worked out for you this weekend!

Yes, I wouldn't travel more than an hour to a race, and esp. a marathon, that I might not get into. Steamtown sounds like the better option. Good luck and the only reason I know how brussel sprouts grow is because I used to live in the Monterey Bay area, CA, where a lot of them are grown.
ReplyDeleteOMG, I thought you posted a huge WEED harvest, hahaha. Yep, I like gazelle's recipe. If I need them fast, I use the same basic idea but put them into a food processor and make smaller pieces and just do all of 'that' in a saute pan. Cooks very fast that way and makes them not so chunky to eat.

I LOVE BRUSSEL SPROUTS. Who knew they grew like that? I make them with panko bread crumbs. Just use egg white and dio and bake in the oven at 375 for 25 minutes!
